Just a simple soup that is full of flavor, with some of my current favorite ingredients (love mushrooms and cabbage right now! Okay, always :)). I don’t really have anything intellegent to say about it… so I’ll leave you to it! ;)
Cabbage & Mushroom Soup w/Gelatin (GF, DF, & SF)
1/2 head of cabbage, approx 4 cups of shredded cabbage
2 medium white onions
8 baby bella mushrooms
2 tbsp sesame oil
5 tbsp unflavored gelatin, divided by 1 tbs (I used this brand)
Start by cutting the vegetables. I sliced the cabbage and onions into shreds using a mandolin slicer and then chopped the mushrooms into 1/2 inch size pieces.
In a large non-stick pan, saute the onions, mushrooms, and cabbage in the sesame oil. Once sauted, I filled 5 mason jars with equal parts of the sauteed veggies, and added 1 tbs of gelatin to the top of each jar. Then I filled each jar with water until the gelatin was covered and mixed it all together with a fork. The mason jars went into the fridge and were bought out each day during lunch, and heated in the microwave for 2-3 minutes.
The gelatin isn’t enough to change the texture of the soup, but it’s something that I am trying to incorporate into my diet more, because of all the good things I’ve heard about it, especially for hormone balance. This isn’t high in calories but it’s a very warming and satisfying soup. I wouldn’t say it’s ‘filling’, as I usually eat it as part of my lunch, not exclusively as my lunch, but it does hit my ‘savory spot’ really well :)
