I’ve been growing collard greens for the first time this year. And I’m not really surprised by the amount I’m getting (seems average), but I was surprised at much actual eating that yields… haha! Once I made a few batches of sauteed collard greens (with a small amount of coconut oil and usually some sunflower seeds), I was ready for new ideas. I usually can only eat so much of something, even if I like it. So I asked some of you on the Living Free Facebook page to share ways you’ve had collads.

One idea that stuck was to use them as wraps. At first I wasn’t sure though. For the most part, I don’t like collards raw. I’ve tried them multiple times in different green smoothies and have been utterly disappointed (I think I’ll be sticking to spinach and kale). But I have to say, I really liked them in these wraps!

It’s also a great way to enjoy some sandwich fillings without bread or a tortilla style wrapper. Although I think this filling would be tasty in those too!

Apricot Chicken Wraps with Collard Greens (GF, DF, & SF)

Ingredients:

5 medium sized collard green leaves (ours were fresh picked!)
2 medium chicken breasts, grilled with favorite hamburger seasoning (we used Bucks Seasoning)
5 dried apricots, sliced (fresh would have been awesome, but I only had dried)
1 medium cucumber, peeled and thinly sliced
3 tbs sunflower seeds
3 tbs crumbled goat cheese

Instructions:

If you haven’t already done so, grill the chicken. Once that is cooked, let it cool enough to cut into strips. Then divide the strips into 5. Lay the collard green leaves out on a platter or large plate and place 1/5th of all ingredients on each one. Roll and enjoy!

We didn’t eat the stems, just up until that point and then added them to the compost pile. These wraps are certainly not a real ‘on the go’ option like a tortilla would be, but they were a nice change from a salad and would go fine in a container for a work style lunch. I think we’ll probably do these again, with different variations. Right out the garden is the way to go! :)

    My Collard Greens in the garden are the gift that keeps on giving. I had a Collard patch that produced for 2 years before it seeded out. This is a great wrap, I will have to try it. Thanks for sharing with Full Plate Thursday and come back soon!
