quinoa pilaf with chicken

I’m calling this a pilaf because, frankly, I didn’t know what else to call it.

When I make a meal, specifically lunches for myself, I usually have three main parts – protein, vegetable, and starch. Anything else that gets in the mix is a bonus. I like this system because I don’t have to be all that creative if I don’t want to be. But conversely, I can be very creative if I want to be, while still having a balanced meal.

Although can I be honest? This is in the ‘not very creative’ department. Sometimes simple is best! This is delicious, full of a variety of important nutrients, and re-heats great in the microwave. What’s not to love?

Quinoa Pilaf with Chicken (GF, DF, SF)


2 cups of quinoa
4 cups water

2 chicken breast, grilled and seasoned
1 cup kale
1 cup collard greens
4 cups spinach
3 tsp EVOO

Seasoning for chicken I used: onion powder, garlic powder, and lemon pepper


In a medium saucepan, add the water and quinoa. Place on a burner set to high and cook until you have a rolling boil. Cook 5 minutes, remove from heat, and cover. Set aside (should rest this way for at least 20 minutes).

If you haven’t already grilled the chicken, do so now. I covered the chicken with the seasoning and cooked in a George Foreman grill. But really, you’ll be chopping up the chicken and adding it to the quinoa, so however you like it is how you should do it. (Boiled, baked, grilled, etc). Once cooked, let it cool and dice into 1″ pieces. Add to a large mixing bowl.

Saute the greens in a large skillet with the EVOO (extra virgin olive oil) on medium for about 15 minutes, or until all of the greens are completely ‘wilted’. Dump the greens and quinoa into the mixing bowl and combine all three ingredients.

This made enough for me to enjoy as a lunch Monday through Friday. I think I ate about 1 1/2 cups per lunch. Either way, it works wonderfully as a leftover dish, so make as much as you want! :)
