So… you know that feeling when you are browsing your countless blog post drafts and you land on a read-to-go recipe from 2 years ago? No? Just me? Well, I decided to just act on the feeling and post this recipe anyway. I’ve even made this since the first time! Just completely forgot that I had written a blog post about it and was going to share it. Oh well – better late than never, as they say.

This is a fantastic alternative to creamy mashed potatoes. They are a little lighter in texture, but I like that a lot. Smooth and creamy, but low in calories. A great side dish for just about any dinner meal!

Creamy Mashed Garlic Cauliflower

Ingredients:

1 extra large head of cauliflower
1 tbs dried garlic slivers, for steaming (optional)
2-3 tsp sea salt
1 tsp garlic powder

Instructions:

In a steamer, add the cauliflower and dried garlic. Steam for 15 minutes. Remove the florets and add to a food processor, or I used my Vita-mix. Process on medium for about a minute, using the tamper to make sure each piece is blended. If you use the garlic gloves after steaming (aka, you process them into the cauliflower), I wouldn’t use the additional garlic powder unless you add it by taste.

Mix in garlic powder, salt, and serve!

Low in calories, but not in flavor – the best :)
