IMG_0137This week I will be sharing recipes that highlight products from the company Nutiva. They recently sent me a box full of some of their most popular products to review and also to choose what to giveaway to one of you! I have been purchasing their protein powders for a while now, as the Nutiva Hemp Protein Powder is a great option for someone who wants the protein, but no dairy (whey) or chemicals/sugar included. These are organic and I love to include them in a shake with almond milk and banana. The first time I tried the powder it seemed grainy, but that isn’t a texture that bothers me. I’ve also tried blending the shakes longer than I normally would and this removes most of that texture. My favorite for shakes is vanilla flavored.  But I digress.

The other highlighted ingredient is Coconut Manna, which is really just pureed coconut, commonly referred to as coconut butter. Frankly, I could eat this stuff right out of the jar, it’s delicious! But there are lots of ways you can incorporate it into your recipes. Although this was the most requested item in a poll of Facebook followers, this is also my 2 favorite products from Nutiva, so I’m very excited to have the opportunity to give them away to one of you! I use these powders in baking (see Protein Packed Breakfast Wafers for an example), and also in protein shakes made with some sort of combination of almond milk, fruit, honey, and nut butters. It’s more like dessert than a protein shake!

Chocolate Covered Almonds w/Nutiva Coconut Manna & Oil

I got the idea for this recipe from CoconutMama.com, although she did coconut covered raisins as a substitute for yogurt covered raisins. The effect was very different and this didn’t really turn out how I thought it might – I think it’s because in her recipe, the mixture soaked into the raisins. So mine would probably be better defined as a ‘bark’. But I personally think a bark is mostly the candy, with nuts included. This is more like nuts, but with chocolate included ;)

Ingredients:

1 1/2 cup raw almonds
1/4 cup  Nutiva coconut manna
1 1/2 tbs Nutiva coconut oil
2 tbs honey
4 oz unsweetened baking cocoa (I used Bakers)
1/2 tsp vanilla extract
pinch of salt

Instructions:

In a double boiler, or in my case I use a glass bowl on top of a small saucepan, add all the ingredients except the almonds. Mix well and continue to stir occasionally until the mixture starts to boil. It is a faint boil, but  you will begin to see small frothy bubbles on top. Add in the almonds and mix well. Remove from heat.

In a glass 9×13 pan lined with parchment paper, pour the almonds out. Place the pan in the freezer for a minimum of 20 minutes then chop the solid piece into little bits. I poured all those back into a glass dish and keep them in the fridge. With the summer weather, do not leave them out! Coconut oil will turn to liquid if it’s over 73 degrees F… So keep them cool until you are ready to snack!

Enjoy! They are not super sweet, but they are delicious!

    Looks delicious and I have a jar of coconut manna sitting in my pantry. What unit of measurement did you use on the coconut manna… 1/4 cup? Also, did you use cocoa powder for the chocolate flavor or is it like white chocolate?
