I was going to call them cookies, since that’s how I refer to them in our house. But I didn’t want you to get the wrong idea. These are not super sweet by any stretch of the imagination. But they have a crispy outside with a soft, dense inside and are a wonderfully filling accompaniment to a smoothie or juice breakfast. And what a fun way to get more protein! I chose to make these with pinto beans because that’s what I had an overabundance of. Instead of buying cans of beans, which ARE convenient, I choose to cook my own from dried beans. I think next time I won’t make so many pinto beans. I was forced to get creative ;) I’d like to try this recipe or something similar with northern beans, which have less flavor and should need less ‘masking’. Personally, I wouldn’t mind actually tasting the beans, but this recipe does a wonderful job of making me forget there are even beans in it!
Protein Packed Breakfast Wafers
1 & 1/2 cups pinto beans, washed and drained well (approx 15 oz)
2 tsp vanilla extract
1/4 tsp NuNaturals alcohol free liquid stevia
1-2 tbs water, as needed
2 tbs peanut butter
3 tbs Nutiva hemp protein powder
1/4 cup chia seeds
2 tbs honey
1/4 tsp salt
1/4 tsp cinnamon
Preheat the oven to 35o degrees F.
In a food processor, add the beans and pulse until the processor gets ‘stuck’ (stops making any visible changes to the beans). Add the vanilla, stevia, and water and blend until the beans are a puree. Add all other ingredients and continue to pulse until the mixture is again a smooth puree.
Lay parchment paper over your pan and using a tablespoon measure, scoop out batter and lay on the paper. These wafers will not spread, so what you see is what you get (aka – make sure to press them down into the shape you want them to be).
Bake for a minimum of 25 minutes at 350 degrees. Bake for 30 minutes if you like a darker edge (this is what I did, because I do!)
Makes approximately 2 dozen wafers.
