What is it about brownies that makes everyone love them?
Well, I can’t speak for you… but I love the hard exterior and soft fudgy interior. No, not all brownies are like this. But the ones I use to make were. And not that long ago, either. Gluten free brownie mixes from the store are my own personal Pandora’s Box. Back when I was only gluten free (during my pregnancy I ate dairy and sugar), I went crazy on these things. Not good. But OH-SO-GOOD. If you get my drift ;)
Enter the ‘no sugar’ diet again. Hmm, that takes out literally every GF boxed brownie mix that I know of. I’m pretty sure they were at least 50% sugar… probably why they were so delicious? Well, I’ve found a way to fill that sad, sad void in my life in a healthy way. These brownie bites are made of fruit and nuts, sweet and delicious, AND fudgy. I am a texture person and so when I tried this and discovered I could savor it in my mouth like a boxed mix brownie, I’ve never looked back.
I’ve made this 3 or 4 times since the first discovery. Each time was different, because I like to experiment, but I honestly liked them all. I have played around with the ratios of fruit to nut, types of fruit, etc. Again, I think they all were great. But this recipe is the one I thought rose to the top. I hope you enjoy these as much as I have!
“Brownie” Bites (from Fruit & Nuts – GF, DF, SF)
2 tbs raisins
1 cup almonds, whole
1/2 cup pecans, whole or halved
2 tbs all natural peanut butter (I make my own)
1/4 cup honey
1/2 tsp salt
2 tbs cocoa powder
1/2 tsp NuNaturals liquid stevia
2 tsp vanilla extract
Using a food processor, chop the almonds for 5 minutes, or until the almonds are ground very small. Then add all other ingredients and run the food processor another 5 minutes, or until the mixture starts to ball up/combine. Use a teaspoon measure to scoop out portions to roll into balls. This amount of mix makes about 4 dozen 1/2 inch balls. They last up to two weeks in the fridge (maybe longer, I don’t know for sure though because I eat them within two weeks every time… haha).
I play around with the amounts of each ingredient each time and although this can alter the texture, taste, and roll-a-bility (new word?), I’ve loved every version. So I guess what I’m saying is, try it no matter what. Even if you’re missing an ingredient or need to do a substitute. Chances are you will love it anyway.
