This is what I have been eating all week for breakfast. And in some form, every morning for the last few months. And probably the next few months too. I’m just not a fan of the green smoothies yet. Although, to be fair to them, I think the last couple times I tried it, I had way too many collared greens and kale. It was like trying to swallow a bite of salad. With no salad dressing. Or toppings. SO, I have some experiementing to do there – clearly. But until then, I have this super healthy and wake-up-worthy fruit and veggie smoothie.
It tastes great, but I especially like that it’s easy to prepare in the morning (see my instructions for how I plan ahead) and is light but also energizing. It’s like my cup o’ joe. The Hubs knows he won’t get any useful information out of me if he tries to chat before I have it in the am. So yeah, sort of like my own personal coffee fix.
- 1 apple
- 1 small yam/sweet potato (approx 1/4 cup)
- 1 med orange
- 5 baby carrots
- 1/2 large banana
- 1/2 tsp vanilla
- 3 drops of NuNaturals alcohol-free liquid stevia
- 3/4 cup filtered water
Using a strong blender (I use a Vitamix), combine all ingredients. Start on low and steadily increase to a higher setting. I usually blend for about 2 minutes.
Makes approximately 2 1/2-3 cups.
Also, just a fun tip – I premake individual smoothie bags on the weekend for the upcoming week. It’s a one stop process so all I need to do in the morning is dump the bag in, add water, stevia, and vanilla – and I’m done! I actually do it each morning while holding my baby. It’s a life saver to have them all ready to go!
