These are just awesome! And I can get away with saying that because it’s someone else’s genius – hehe. I was inspired by a recipe I saw on Nutrition on the Run, and I was NOT disappointed in trying them! They were sort of like a dessert, but also a great afternoon snack when I hit that ‘lull’ in my day. (Afternoons should be nap times! ;)). I would eat 4 as a snack and they were surprisingly filling. Notice that I said ‘were’. I ate these everyday until they were gone! I will likely be making them again very soon…
Ingredients:
1 cup pitted dates
1/2 cup almonds
1 tbs chia seeds
2 tbs cocoa powder
2 tbs instant ground coffee
Instructions:
Put all ingredients into a food processor and pulse until the date and almond pieces are at least coarsely chopped. Roll the ‘batter’ into 1 inch balls. I will warn you, this was messy! But then you get to lick your hands off when you’re done and that’s really fun ;)
