Has it really been a month already? June really came and went faster than I could blink. It’s been a great month though. Lots of excitement! And we had Father’s Day! Did everyone enjoy a good day with the dads in their lives or their own dads? Hope so!
You Love Him, So Spoil Him! Father’s Day Fair
Let’s continue the celebration of them by looking to see what many of you treated your fathers (or favorite father figures in your life) to this year!!!
Quinoa with Walnuts, Mushrooms, and Raisin from Iris at the Daily Dietribe. Iris dedicates this recipe to TWO great dad’s in her life – what a blessing to have two :) I love anything with quinoa but am especially excited to try this recipe because I imagine the blended flavors of procini mushrooms, raisins, and parsley are the perfect combination!
Rustic White Bean Dip from Valerie at City Life Eats. Valerie gets her adventurous eating habits from her dad, so she’s sure he’d like this creative rendition of hummus!
Whimsy Peach Cupcakes from Vicky at Sweets at Vicky’s. These cupcakes were made as a tribute to all the things Vicky’s dad is. In particular, he’s a supporter of her baking and is always the first to tell others about Vicki’s skills. We can’t ask for a better dad than one who whole-heartedly supports our endeavors!
Dad’s Favorite Chocolate Chip Cookies, Grain-Free from Zoe at Z’s Cup of Tea. This recipe of Zoe’s has become her dad’s favorite (I suppose the title gives that away ;)), so every time she makes chocolate chip cookies, she makes his a batch all to his own. That’s love (I know I’d have a hard time sharing these)! :)
Angel Food Cake from Linda at The Gluten Free Homemaker. Linda made this cake for her husband, a favorite dad in her life. She served it with a lemon curd and he loved it!
Chocolate Peanut Butter Cup Cake from Cindy at Wheatless Foodie. Cindy’s recipe for Father’s Day has my mouth watering. I love anything with chocolate and peanut butter and this would certainly be no exception!
Dairy and Egg Free Blueberry Buckle from Maggie at She Let Them Eat Cake. You could have come to this conclusion yourself I’m sure, but this dish of Maggie’s was a hit with her dad! I know it would be a hit with mine too. Her dad loves blueberries (and shares her love of all things sweet!), so naturally this was a winner this year for Fathers Day.
Pineapple Layer Cake with Maple Coconut Whipped Cream Frosting from Shirley at Gluten Free Easily. The cake was made specially for Shirley’s dad and he gave a rave review! Shirley’s post also includes the card she gave her dad, which was also a hit, so be sure to enjoy it too! The cake was so popular, Shirley is considering making it again for him on his birthday!
Toothsome Coconut Brownies from Naomi at Straight into Bed Cakefree and Dried. Naomi not only shares this incredibly tasty recipe with us (the photo speaks for itself, no?), but she also shares a beautiful story about the fabulous father in her and her son’s life. The story even involves paper chain ‘dads’ – so be sure to give it a read! :)
Rainbow Cookies from Stephanie of No Grain, No Pain. (Photo by Britt of GF in the City). I had SO MUCH FUN reading Stephanie’s blog post. She really took this month’s theme to heart and used her post to highlight her dad and make his day special. Her dad loves Mexican food and also has a big sweet tooth, so Stephanie made a rendition of the Mexican Cookies shown below.
She also sent a lovely photo of her and her dad, which made me happy; because that’s what this month is all about! Thanks for the lovely and inspiring post, Stephanie :)

I don’t know about you, but it seems to me that our dads like to be spoiled with sweet treats the most! I’m just happy that we could come up with so many gluten free treats for the special men in our lives. Fathers Day might be over, but don’t forget to let the fathers in your life know how much they mean to you – it’s never out of season to say ‘I love you, dad’!
