These turned out a lot better than I expected. Seriously! I was looking at ingredients in my cupboard and pulled out a can of olives, a can of chicken, and a bag of cashews… what to do with them? Once I put the batter together I tried frying them, like you might a black bean burger. But that failed miserably because it didn’t cook the insides of the burger and it just fell apart. Baking them though solved the problem and it also made them slightly healthier; without all the oil from frying.
One thing to note about these burgers is that they are very filling. I think that’s a necessary thing because the burgers, although made from natural and healthy ingredients, are quiet full of fats and protein. So if you’re counting calories, it may be a challenge to have more than a few of these at a time. Luckily for me, they froze and thawed really well. So I kept them in Ziploc bags (4 patties each) in the freezer until I ate them all.
Cranberry Olive Chicken Burgers
1 cup cashews
1/2 cup unsweetened almond milk
1 can 12 oz chicken
3/4 can (1 1/2 cups) black olives
1/4 cup unsweetened dried cranberries plus 10 drops liquid stevia (you can use regular sweetened cranberries if you like)
1/4 cup potato flour
Preheat the oven to 375 degrees.
In a blender, combine the cashews and almond milk until smooth. Add in the cranberries and stevia. They don’t have to be completely chopped up, just a little more than they were as whole pieces. Add to a medium mixing bowl. In a food processor (I have a hand crank one – ‘salsa express’), chop up the olives and the chicken. Mix into the cashew mix. Once everything else is combined well, slowly mix in to the potato flour.
Spray a cookie sheet and using about 1/4 cup of batter place the patties on the pan. Shape with your hands and flatten – they will turn out the same size and shape you put them as. Bake on one side for 15 minutes, than flip the burgers (carefully!) and bake for an additional 10 minutes. When you pull them out of the oven, let them cool before moving them. Once they cool they don’t break apart, but when they are warm this is likely to happen.
