So here’s a confession. I’ve been indulging my sweet tooth and candy addiction for a very long time. Almost since I’ve started this blog. I know what you might think… ‘but I thought you had a sugar free diet’? Well, I’m happy to announce that I’ve been doing both… eating candy and also not eating sugar. And I’ve decided it’s about time I share the love…
Ultimate Chocolate Addict Recipe
1 oz 100% cocoa bars (baking chocolate)
15 drops alcohol free NuNaturals liquid stevia
Multiply this however many times you’d like – depending on your chocolate addiction ;)
In many cases, I use a small glass dish and put in the 1 oz of baking chocolate. I microwave that for about 1 minute, but not all at once. So I start with 30 seconds, then I do 15 and then 15 again. Otherwise the edges get burnt. You’ll likely need to play around with this a bit in your own microwave, but feel free to use my method as a guide. After I drop in the liquid stevia, I use a fork to mix it up. Then I eat it off the fork, at any temperature and at any stage.
But if you want to make actual bars like I’ve shown above, I use a slightly different method. I have a large saucepan that has an addition for melting. If you don’t have something like this, you can use a small saucepan in a larger saucepan. Fill the large saucepan up with about 2 inches of water. Add 8 oz of chocolate to the small saucepan, 1 block at a time until it’s all melted. Then add in 1 and 1/4 tsp of the liquid stevia. Mix well and pour onto a cookie sheet or baking tray (one with sides is definitely recommended!). I also highly recommend covering the tray with aluminum foil prior to melting the chocolate. Once cooled, the chocolate will be easier to slice and break if it’s on the aluminum foil, which it will just pop off of.
A note about the stevia: I DO NOT recommend using any other brand than the alcohol free NuNaturals liquid stevia. Every other type of stevia I’ve used with this has made the chocolate have a weird aftertaste and it’s just not an overall pleasant experience. In general, I refuse to use any other brand of stevia because NuNaturals has proven itself in many different dishes. But that’s just my opinion :)
For a hopeless sweet tooth like myself, this method of still enjoying a treat is really a lifesaver. No need to give up chocolate or go way out of your way to make something fancy to satisfy that need for something sweet. I hope you all enjoy this as much as I do!
