But seriously. These are soft on the inside, crunchy on the outside. Happiness in a cookie, my friend.

With a cookie like this, I don’t think there is anything else left to say…  (p.s., this is not a tupperware commercial – which one could argue the photo suggests)

Ultimate Chocolate Chip Cookies

Ingredients:
1/2 cup coconut oil
1/2 cup coconut sugar (palm sugar)
1/4 cup overly ripe mashed banana (about 1 small banana)
1 egg
2 tsp pure vanilla extract
1 cup sorghum flour
1/4 cup millet flour
1/2 tsp salt
1/4 tsp xanthan gum
1 tsp baking powder
1/2 tsp baking soda
1/2 cup Chocolate Chips (or however many you want :))

Instructions:

Mix together the coconut oil (you’ll need to melt it) with the sugar until it dissolves. Mix into the mashed banana. Add the egg and vanilla. Set aside. In a separate mixing bowl, add all your dry ingredients, including the chocolate chips. Use a whisk to make sure everything is blended in well. Pour the wet into the dry and mix well. I use a tablespoon to scoop out the cookies and get the size that I wanted. Bake at 350 degrees for about 7-9 minutes.

Try not to eat them all at once now ;)

    These look insanely good. I love that they’re browned around the edges, too. I, too, am digging the banana idea. Yum, yum yum.

    I made Shirley’s chocolate chip cookies this summer and they had mashed banana in them too, and they were truly the best chocolate chip cookies I’ve had. I love that this recipe is refined sugar free. I still haven’t tried coconut sugar…still just doing stevia for now. But I know I’m going to give it a try eventually, and this recipe will be the first one I make!

You grabbed us with that Ultimate label and oh, boy, do they look like the ultimate! :-) Iris beat me to sharing that I love banana in chocolate chip cookies :-), but it really adds moistness and complements the chocolate well. Love your other ingredients, Aubree! These are going on my list for sure. ;-)
