Hey all! I’ve been away for a few weeks, having a grand adventure in the wonderful countries of South Africa, Swaziland, and Lesotho (pronounced leh-soot-two). I didn’t have much internet access while on the trip, so I wasn’t able to keep up with my recipe creations and blogging. However, I DID manage to take some photos of some of the food I was able to eat while on the trip. I’ll warn you though, it’s not exactly glamorous. But honestly, I was happy to have anything to eat at all! I went with a group that primarily were all vegetarian, and you know what that means. Lots of bread and pasta! Luckily rice and vegetables are pretty much a staple in the southern countries of Africa, so I fared pretty well. On to the pictures!

(Luckily most breakfasts afforded eggs. I also ate a lot of cornflakes with soymilk- topped with banana when I could – and baked beans were also common. Fruit was mostly mango, papaya, guava, banana, apple, and oranges – and usually mixed together in a salad.)

(Even though I was with vegetarians, we ate a lot of buffet style breakfasts with other groups who were not vegetarian. That helped give more options. This was my favorite breakfast because it was such a spread! More baked beans-they’re NOT anything like the sweet Boston baked beans, they taste just like the baked beans that are common in Ireland or England, plus eggs and fruit. This time potato’s with onions and some meat.)

(This was a super tasty dinner. Rice, lentils with onions, fresh avocado, and then a steamed cabbage and pepper mix – which was to die for!)

(I ate a lot of rice! This also is a salad with beets, some potatoes, and some tomato sauce for the rice.)

(This salad had a beet topping with sweet corn in it. Very tasty! Rice and grilled chicken also)

(I think this was my favorite meal, we had it at a cultural village in Swaziland. Cubed roasted pumpkin, shredded beet salad, rice, grilled chicken, and spicy roasted potatoes. And a little bit of cream curry sauce for the rice [I cheated a few times, it’s true… it mostly was on accident though!])

(This is what my lunch looked like almost every day. Any fruit I could find at the breakfast buffet we had, hard boiled eggs-also taken from breakfast, a cliff bar I had packed from home in case of emergency, a little baggy of 100% fruit snacks, and a bag of emergency corn flakes in case the eggs weren’t enough – you guessed it… stolen from the breakfast spread ;) Nothing glamorous at all, but hey – I survived just fine!)

(An avocado right off the tree! Unfortunately we weren’t there long enough for it to be ripe enough for me to eat it. And I didn’t feel like trying it sneak it past the pesky customs guys. Good thing, there was extra tight security at the airport on account of the recent happenings in Libya.)

(This is called ‘mealies’. It’s basically hard corn that they set on the fire and scorch a little bit. You eat the kernels off in pieces. It’s like eating really chewy popcorn. Some people in our group hated it, but I loved it! I think it was mostly because of the texture. And lets face it, it was something other than hard boiled eggs to nom on ;))

  2. Welcome home, Aubree! I don’t think your meals look boring at all. You did pretty well. When there are limited options, I don’t mind eating repetitively to eat safely. Were the cornflakes from there are gluten free? As you know, basic cornflakes here are not gluten free. That roasted corn does look interesting. Need to catch up on all your posts!

    Shirley, good call on the corn flakes! I never eat them in the states, so it didn’t occur to me to think about it when I was in Africa. I seemed to do okay with them though, so I’m wondering if they ARE different there…
