Oops… I ate most of them before I thought to post the recipe here… hence all the half eaten patty photos! :)
I originally didn’t think to post this recipe, but as I was finishing up the batch, I decided they were too good not to share – even though the recipe is pretty simple and uses a pre-made mix.
I’m currently traveling in India for my masters program… I actually made these a while ago. But I thought I’d pass this recipe along while I’m eating real falafel… :D Come back next week to see a more authentic Indian dish that I put together. This one is just for fun!
Black Bean Falafel Burgers
1 can black beans
1 cup falafel mix (you can pick these up at an Asian grocery or I find it at most supermarkets)
1/2 tsp salt
1/4 cup unsweetened almond milk
Preheat the oven to 350 degrees.
In a mixer, add the black beans (I use a ‘salsa express’. Any sort of food processor will do). In a small bowl, beat the eggs. To the eggs add the salt and almond milk. Add both of those to the blended beans. Once everything is processed together well, pour it into a medium mixing bowl and use a fork to mix the falafel mix into the bean mix. Once they’re combined well, set aside.
Prepare a cookie sheet. Either use a non-stick pan, apply a spray, or like I did, you can cover a pan with aluminum foil and spray that. Use a 1/4 cup measuring tool and scoop up the batter. Plop it onto the tray and shape into a patty. I recommend wetting your hands to do this.
Bake the patties for approximately 15 minutes, depending on how dark you want them. Bring them out of the oven and let them cool for at least 10 minutes before moving them. Once they’ve cooled, they hold together well. I had one break when I tried to move them hot, so I waited until they cooled after that.
These are fabulous if you already like falafel! It’s basically a falafel taste but is more hardy and a lot healthier than straight falafel. You can put them in a sandwich of course, but I had them plain and was just as happy!
