As I’m currently traipsing around India, I thought it would be appropriate if I posted a recipe that I tried which is similar to a traditional Indian dish.
I made this dish a while back, when I had stumbled across a similar recipe. Many Indian dishes use ghee (a form of butter) and some of their sauces are cream based. I more or less just omitted any ingredients that I’m not able to have and I think it turned out great, regardless!
I hope that I will have a chance to try many different dishes before I get back to States!
Baingan Bharta (Indian Eggplant Dish)
2 medium eggplant
1 large tomato
1 white onion
1 green pepper
2 tablespoons oil
1/2 tsp salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
First remove the stems from the eggplant. I filled a large microwave safe bowl with water and placed the eggplant in it. They float, which seems weird, but it ended up working okay. Microwave the bowl for 10 minutes. The goal is to have the eggplant tender and somewhat cooked before putting it on the stove. Remove the eggplant from the bowl of water, let cool, and then peel. (Roasting might also be a good option, but I was impatient evidently…)
Finely chop the onions. Add to a large frying pan with the oil already warmed up on medium heat. Saute them for about 15 minutes or until the majority of the onions look clear on the edges. While they are sauteing, finely chop the tomato and pepper. Add them to the mix and continue to saute, about another 10 minutes.
Next, cut the eggplant into pieces approximately 1/2 to 1/4 inch cubed. While adding the eggplant to the pan, also mix in the salt, pepper, and cayenne pepper. Saute for an additional 10 minutes or until the eggplant have become tender. Remove from the heat. Serve immediately!
This would serve 4 people for a dinner, although it lasted me all week! I ate it with quinoa, and so it’s a great way to have a balanced meal. It was also VERY filling. A simple dish really, but naturally tasty!
