This isn’t exactly a recipe for the potato salad you’re likely thinking of. It’s not the kind you buy at the local grocery store and it’s also not drowning in mayonnaise. Not to say that type of potato salad is bad, they can be pretty tasty.

I’m calling this a potato salad because 1) it has potatoes 2) it’s a mix of different fresh foods like in a salad¬† 3) it would be great at a BBQ and 4) it tastes good cold. So yes, one could argue that my recipe title is misleading. But that’s okay, I don’t mind, I just love how filling and tasty this dish is :)

Quinoa Potato Salad

Ingredients:

1/2 cup quinoa grain, soaked
2 large onions
2 tbs canola oil
1 cup fresh basil leaves, packed
6 small red potatoes
3 large carrots
1 tsp onion powder
1 tsp salt
1 tsp Italian seasoning

Instructions:

Add the quinoa to a strainer and soak in water for at least 5 minutes. Set aside.

In a large skillet, add the canola oil. Cut the onion into coarse pieces (I sliced it horizontally and then quartered each slice.) Add the onion to the oil and saute on medium heat.

Wash the basil well and remove all the stems. Add the basil to the onion’s and saute. In total, the onions should be sauteing on medium for about 25 minutes, or until they’re clear and beginning to brown on the edges.

After washing the root vegetables, cut the potatoes into chunks and slice the carrots finely. Add them and the rinsed quinoa to a large saucepan. Add enough water to cover all the veggies plus about an inch above. Boil on medium/high heat, mixing occasionally. Add the seasoning and salt. Cook until the veggies are tender; should be about when the water boils out of the pan.

Once the water is boiled out of the saucepan, add the mixture into your large frying pan and mix with the onions. I continued to let it cook for an additional 5 minutes and then removed it from the heat.

Serve immediately! It also tastes well after being refrigerated (this was one of my ‘cook ahead’ meals and it worked great.)

    It’s your recipe so you can call it whatever you want. Quinoa potato salad works for me. It looks tasty. I love the color that the carrot adds, and I bet the basil contributes nice flavor.

    How exactly did you soak the quinoa? This sounds great! Will try it as soon as I figure out how to soak the quinoa.

  13. @Sheree There are lots of ways to soak the quinoa. Essentially what you’re doing is trying to get the bitter coating off of the grains. If you buy a boxed quinoa that is in a sealed package, it’s likely that it’s been pre-rinsed for you. But I also do it just in case (plus I buy it in bulk). I put the grains into a metal strainer and have then sit in water about 5 minutes. Then I run water through the strainer and shake to make sure it gets them all. And that’s it! I’ve always had that work well for me. ~Aubree Cherie
