If you like peaches, this recipe will be too good for you to pass by. I suppose that sounds arrogant, but it’s not because I feel that I’ve created a great recipe… it’s because the recipe simply brings out the natural flavor of a ripe peach.
It’s a perfectly light dessert. It’s so guilt free that you could feed it to your kids for breakfast and know you’re actually doing them a favor!
If you’re the kind of person that loves to have a peach so ripe that the juice can’t help but run down your chin, this recipe is for you. Trust me :)
Peach Cranberry Pie with an Almond Crust
1/2 cup water
1/2 cup almond milk
1 envelope unflavored gelatin
2 large peaches (or nectarines)
1 tbs unsweetened dried cranberries
2 tbs honey (if needed, depends on the sweetness of the peaches)
1/4 tsp vanilla
Slivered almonds for ‘crust’
This pie is delightfully easy! In a medium saucepan, combine the water and almond milk with the unflavored gelatin. Once the gelatin has dissolved into the liquid, turn the burner on medium and watch the mixture. Leave it be until it starts to slowly simmer.
While you’re waiting for the mixture to reach a simmering level, wash and pit the peaches. Use a food processor or similar chopper to coarsely puree the peaches. Add the peaches, cranberries, honey, and vanilla extract to the simmering gelatin mixture.
Once it’s simmering, mix continually for about ten minutes and then remove it from the burner.
Lightly wet down a regular sized pie pan. In it lay the slivered almonds to fully cover both the bottom and the sides (wetting it down helps the pieces stick to the sides and not slide off). Slowly pour the filling into the pan (if you pour fast you’ll dislodge the almond slivers, so patience truly is a virtue here). I also laid some additional almond slivers along the edge of the top of the pie, purely for my own amusement. Carefully move the pie to the fridge and chill over night. Serve chilled the next day.
I actually took this pie and shared it with some of my classmates. Unless someone held their thoughts back, it got anonymously rave reviews! I personally love it, it’s naturally sweet and the peaches blended nicely with the almonds.
