Okay, so it’s a silly title… but I couldn’t help myself :)
These are the perfect little party treats! I’ve made them a few times and they’re always cleaned off the platter before the other appetizers. Aaannnddd people can’t tell they’re gluten free. Do I tell? Sometimes… Maybe :)
The dough is a spin off of Linda’s (Gluten Free Homemaker) multi-purpose gluten free pastry dough. I made it dairy and sugar free so the texture isn’t technically ‘pastry’ anymore. But according to my taste buds, its still fabulous.
Gluten Free Mini Pig’s in a Blanket
1 package ‘Lil Smokies (beef or turkey)
1/3 cups brown rice flour
1/3 cups millet flour
3 tbs tapioca flour
2 tbs cups potato starch
1/2 tbs xanthan gum
1/4 tsp salt
3 tbs cup canola oil
1 tbs almond milk
5 drops liquid stevia
Preheat the oven to 350 degrees.
Mix the flour, xanthan gum, and salt together in a medium bowl. In a separate small bowl mix together the oil, milk, and stevia. Combine both and work it with your hands.
I laid out a piece of plastic wrap on the counter and used a rolling pin to flatten to an 1/8 of an inch. A long rectangular strip is best. I cut the dough into triangles and rolled the ‘Lil Smokies in a croissant fashion.
Place the ‘piggies’ on a cookie sheet and bake them for approximately 20 minutes.
These are definitely an indulgent treat (not great for the waistline if you know what I mean…) And because of their addictive nature, you’ll have to reign yourself in. Hopefully you’ll be better at it than I ;)
