I had an amazing find the other day. An electric ice cream maker (no ice or salt needed) in the clearance aisle at a local department store. It was just under twenty dollars! I was ecstatic. I’d been looking for one for some time, but they usually were around $50, a lot more than I could justify buying for a food I really shouldn’t be eating. So this is the recipe I used for the first test run.
This recipe is an hybrid of multiple ice cream recipes. I didn’t use sugar, but you certainly can’t tell! The amber agave nectar gives this such a rich sweetness that I may never crave ‘real’ ice cream ever again!
I will definitely only make this once in a rare blue moon though. Just because I do feel its a lot healthier than other ice creams, its still very fattening! To help with this though, I recommend you do what I did with the batch. Buy some small containers (I had the ziploc 1/4 cup size containers) and fill those up! That way you’re limiting your servers and the batch of ice cream can last a very long time. I’d recommend not leaving it in the freezer more than a month though. Mine lasted that long and was a grand treat!
Vegan Chocolate Ice cream
2 cans of full fat coconut milk (about 12 oz each)
1 cup cocoa powder
2/3 cup dark amber agave nectar
1 tablespoon arrowroot powder
1 teaspoon vanilla extract
In a small bowl or cup, mix the arrowroot powder with a few spoon fulls of coconut milk. Once that’s thoroughly combined, add to coconut and other ingredients in a large mixing bowl. Whisk together well.
Cover and leave in the refrigerator overnight. I actually mixed the ice cream up at night and didn’t get back to it until the next night. But the main point is so that its completely chilled before you put it in the machine. (make sure you also put the gel canister in the freezer overnight if your using an electric ice cream maker; it has to be completely frozen!)
Set up your machine as per the manufacturers requirements, turn the machine one, and add the mixture. This ice cream took about 25 minutes before it was ready. And boy was it good. So good that I need to get a new exercise program in plan in an attempt to work it all off! (I did share it of course, but wow. It was GOOD!)
