
Okay, so I folded. I’m jumping on the ‘Menu Plan Monday’ bandwagon. I’ve decided that you all know something that I don’t. And I intend to find out! Although I have a feeling it’ll be something along the lines of saving money, eating better, those sorts of things. Sweeeet :D
I suppose I’m doing this a little late for the week. I’ll have to try and draft my menu on the weekend next time I guess.
I have read the guidelines on the MPM page (hosted by I’m an Organizing Junkie) , but I’ve seen a bunch of different formats for laying out the menu plan. I’m not sure yet what will work best for me, so I’m just going to group the types of meals together. You’ll notice there aren’t that many in each category, but that’s because I make a lot of one thing on the weekend and then eat it throughout the week. So according to the MPM page, I’m a BBC (big batch cooker). Which makes me sound a lot cooler than I actually am… :D
Here’s what I have going this week:
Breakfasts:
Green Smoothie’s (spinach, banana, strawberries, blueberries, unsweetened soy milk)
Rice Breakfast Cereal
Lunch:
Mixed cooked vegetables
Rice with chicken and carrots
Roasted sweet potatoes and white potatoes
Supper:
Pizza Omelet (recipe to be posted soon)
Cranberry Pecan Chicken with Rice
Sweet and Spicy Carrot Soup
Turkey Breast wrapped in lettuce with raw veggies
Snacks:
Nut and Fruit Mix (raw pistachios, almonds, and pecans with dried apricots and cranberries)
White Blondie Bars (recipe to be posted soon)
Corn Chips

Sounds like a great menu. Pizza omelet must be a dream. My hubby would want the cranberry pecan chicken with rice. So would I.
