Not to be confused with ‘Date Night Candy’. Okay, so I’m a dork, but I accidentally typed that in the subject line at first and it DOES sound pretty similar – or am I just going crazy? Likely…  Plus, who’s to say you couldn’t have these on Date night? (I need to have one of those, the Boy and I have been toooooo busy lately.) Hey, we could have these Date Nut Candies! :P

Date Nut Candies

1 cup dates
1 cup walnuts
1/4 cup honey or agave nectar
Coconut and Pecan Meal (for covering)

In a food processor or blender, combine all ingredients. It will be a sticky mess, don’t say I didn’t warn you!! I actually had intended to cut the batter and make it into squares, but it was too soft. I do recommend you refrigerate the mix before you try and shape it though, it will make working with it a lot easier. You don’t need to do it in a log form like my photo shows, but it might be easier to use saran wrap to prevent the mixture from sticking to other things.

Cut the bar into 1″ pieces and then get extra dirty by rolling them and pinching them into balls! I had two little dishes, one filled with pecan meal and the other with coconut. Roll away and cover them good! I’ve been keeping these in a container in the freezer. A great quick snack for after a savory or spicy dinner!

I was inspired by a recipe, that looked a lot more successful than mine by the way, at Jenn Cuisine (her’s are gorgeous!). Mine? Well, I guess when it comes right down to it, its the taste that matters right? And speaking of taste, I’m so amazed at nature. Such sweet and flavorful abundance!
